ROAST CHICKEN

The most comforting of all home cooked dishes.
Simple and delicious. I aim to eat less meat at home but there’s one dish that I turn to when I want to treat a few loved ones and it’s roast chicken. I use a method I learnt from a fantastic American cookbook “The Zuni Café Cookbook” which involves salting (brining) for 24 - 36 hrs. Highly recommend you seek it out!
